Devonshire Splits

Not burgers, just sweet creamy buns

Ingredients:
250g plain white flour
5g yeast
150ml milk (warmed)
2 tbsp butter (melted)
2 tbsp sugar
A pinch of salt

Ingredients: Whipped Cream Filling
250ml Double cream
2 tsp Icing sugar
1 tsp vanilla extract

Method:
Step 1:
Preheat the oven at 200˚C and place a baking sheet onto your baking tray.

Step 2: Heat up your milk slightly, not too hot just warm. Add in a pinch of sugar and the yeast, allow to dissolve, and rest for 10 minutes.

Step 3: In a large bowl, combine the flour and sugar and mix with a whisk.

Step 4: Then add in the melted butter and the milk/yeast mixture stir to combine. Knead the dough with a stand mixer or by hand for 8-10 minutes, cover with cling film and allow to sit for an hour or two.

Step 5: Once the dough has risen, use your hand to flatten the dough and begin to separate it into 6 pieces.

Step 6: Roll into a ball shape making sure it is circular and smooth. Place onto your baking sheet and again leave aside for 10-15minutes covered with a cloth.

Step 7: Brush each with milk, and then bake for 10-15 minutes or until they are puffed and golden. Allow to cool down on a cooling tray.

Step 8: While they are cooling, using a whisk or stand mixer, whisk the cream until soft peaks form. Add in your sugar and vanilla as you go along to your preferred taste.

Step 9: To make fresh jam, see my recipe here or you can alternatively use some store-bought strawberry or raspberry jam.

Step 10: Slit the buns 2/3 way through, fill with jam first, and then the whipped cream.

Step 11: Serve as is as or with some icing sugar on top. Whatever your preference is.
