Mango Mousse

Light, moist and summery

Ingredients:
7g Gelatin
4 tbsp Water
300ml Whipping cream
70g Icing Sugar
350g Mango Puree

Method:
Step 1:
Firstly, add gelatin and water to a bowl and mix well, leave to bloom for 5 mins before putting into the microwave for 20seconds. Set aside.

Step 2: Add the mango pulp, sugar, and gelatin mixture to a blender and mix until smooth.

Step 3: Whisk the heavy cream until soft peaks form, then add the mango mixture to the whipped cream, and mix well together.

Step 4: Add to a dessert dish and allow to chill for up to 2 - 3 hours for best results. Serve with fresh mango slices or mango purée on top.

Tips: Serve with some biscoff biscuits and whipped cream!
