Mini Peanut Butter Cheesecakes

Add some Reeses cups on top and done!

Ingredients:
250g Oreo biscuits
300g philadelphia cream cheese
60g butter (melted)
250ml double cream
120ml icing sugar
100g peanut butter
100g milk chocolate (melted)
Handful of reese cups (chopped)

Method:

Step 1: Add biscuits to a food processor and blitz until crumbs form. Pour the melted butter in and blitz again until the mixture becomes clumpy.

Step 2: Line baking tray with cupcake liners, add the biscuit crumbs pressing down lightly to form even layers.

Step 3: Next, in a separate bowl whisk the double cream until stiff peaks form. In another bowl mix together the peanut butter, cream cheese and icing sugar until smooth and fully combined.

Step 4: Fold the whisked double cream into the cream cheese mixture. Pour on top of the biscuit base, smooth it out and freeze for 60minutes.

Step 5: To finish off, melt the chocolate and pour on top of the cheesecakes.

Finally, add some chopped reeses and serve!
