Aloo Kasuri Methi

Potatoes with Dried Fenugreek Leaves

Ingredients:
4 large Potatoes
1 large white onion (chopped)
2 red chillis
1 tsp cumin seeds
1 tsp turmeric powder
2 tbsp oil
1/2 tsp salt
1 tsp red chilli powder
1/2 tsp Fenugreek leaves (Kasuri methi)

Step 1: First, peel and chop the potatoes into squares. Boil until cooked through and leave aside.

Step 2: In a large pan, add the oil, cumin seeds and dry chilli’s cook on medium heat cook for 2-3minutes.

Step 3: Next add in the onions and cook until translucent (10minutes)

Step 4: Once onions are cooked add in the fenugreek (kasuri methi), chilli powder, turmeric powder and salt. Fry for 1-2 minutes.

Step 5: Next add in the cooked potatoes and mix all together. Cook until the potatoes are golden brown.

Step 6: Serve as a side dish or with some basmati rice with fresh coriander.
