Ingredients:
250g Turkey Breast
Handful of Thai Basil
Red onion (chopped)
2 garlic cloves (chopped)
1 red chilli (finely chopped)
Bell peppers (red, green & yellow)
100g Noodles
Pinch of salt & pepper
2 tsp olive oil (or coconut oil)
For the sauce:
1 tsp fish oil
1 tsp light soy sauce
1 tsp dark soy sauce
1 tsp brown sugar
1 tsp sesame oil
1 tsp water
Extras:
Lime slices
Sesame seeds
Spring onion (chopped)
Method:
Step 1: Heat a large pot of water, once it begins to bowl add in a pinch of salt.
Step 2: Next add in the noodles allow to cook for 10 minutes
Step 3: Pour 2 tsp of olive oil or coconut oil into a large pan or wok and bring to a medium heat.
Step 4: Cook the turkey on medium to high heat, season with a pinch of salt and pepper and cook until it turns white.
Step 5: Next, add in the red onion, garlic and chillies and cook again for a further 2-3 minutes.
Step 6: Pour in the sauce and allow to simmer until it becomes a little thick.
Step 7: Add in the chopped vegetables and chopped thai basil.
Step 8: Allow to cook all together until vegetables become soft.
Step 9: Before serving, pour in the noodles to allow them to be fully incorporated in the sauce.
Add more salt and pepper to taste.
Step 10: Serve with the lime slices, some sesame seeds and spring onion.
I love to top it off also with sriracha!
