Vegan Peanut Butter Blondies

Ingredients:
200g Light brown sugar
60ml coconut oil
120g All-purpose flour
185g Smooth peanut butter
60ml Almond milk
1/2 cup chocolate chip or peanut butter cups (vegan)
Method:
Firstly, preheat the oven to 175˚C and line a baking tray (20x20) with a baking sheet.
In a medium mixing bowl, mix together the brown sugar, oil, and peanut butter (creamy or melted) and beat until smooth. Next, add the flour and mix until fully combined. Pour in the almond milk and stir, finally fold in the chocolate chips or peanut butter cups.
Pour the batter into the baking tray and bake for about 25 minutes, remove from the oven and allow them to cool and firm up.
Finish with some melted chocolate on top and cut into squares.
