Ingredients:
400 g White Chocolate
100g Lotus biscuits
50g butter (melted)
50g Marshmallows
125g Biscoff spread

Method:
Step 1: Grease and line a baking tin (18”) with baking paper.
Step 2: In a large bowl, add in the Chocolate and Butter – melt on low heat over a pan of simmering water, make sure the water doesn’t touch the bowl, or in the microwave on short bursts until fully melted – stir till smooth!
Step 3: In a separate bowl, melt the Biscoff Spread in the microwave for 30 seconds or so or until runny, and beat into the melted white chocolate mix.
Step 4: Once it’s melted and combined, add in the Marshmallows and chopped biscoff biscuits and fold together – pour into the tin and spread till it’s even.
Step 5: Lastly, melt some extra Biscoff Spread and drizzle over the top of the rocky road and sprinkle with some more Biscoff Biscuits, and refrigerate until set!
Cut and serve!
