Orange & Raisin Shortbread Biscuits

Perfect with a cup of tea

Ingredients:
200g plain flour
25g corn flour
150g butter (salted)
75g caster sugar
1 tsp Orange extract
25g dark chocolate (chopped)
25g Raisins

Method:

Step 1: Preheat the oven to 180˚C and line a baking sheet with baking paper.

Step 2: In a large bowl, whisk together the butter and caster sugar until smooth. Add the orange extract, raisins & chocolate chip mix again until fully incorporated.

Step 3: Sift in the dry ingredients so the flour and cornflour, mix to form a stiff dough. Once the dough has formed, tip the dough onto a floured surface and gently knead until smooth.

Step 4: Roll out the dough and using a cookie cutter to cut the shapes you wish to have. Place each one onto your baking tray.

Step 5: Bake for around 15-20 minutes until the edges are golden.

Step 6: Leave to cool on the tray for 5-10 minutes, before transferring to a cooling rack.
