Chocolate Digestives

The king of the biscuits

Ingredients:
165g wholemeal flour
¼ tsp salt
1/4 tsp bicarbonate of soda
135g fine oatmeal
130g cold butter, diced
40g soft dark brown sugar
150g dark chocolates
2 tbsp milk

Method:
Step 1: In a large bowl place the flour, oatmeal, salt and bicarbonate of soda stir and then rub in the diced butter until it looks like bread crumbs.

Step 2: Next stir in the sugar and then add in the milk, start to bring the mixture together by squeezing and kneading in the bowl to form a dough.

Step 3: Flatten into a disc and wrap in cling film before placing in the fridge for 30 minutes.

Step 4: Line two baking tray with baking parchment, place the dough between 2 sheets of paper and roll the dough out.

Step 5: Using a cutter stamp out circles, place on your prepared tray leaving spaces between and making sure to prick the surface of the biscuit with a fork or skewer. Place in the fridge for 20 minutes.

Step 6: Preheat the oven to 190˚C and bake the biscuits for 15-20 minutes until golden and crisp.

Step 7: Leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.

Step 8: While the biscuits are cooling, melt your chocolate over a pan of simmering water.

Step 9: Once melted and your biscuits have cooled, dip a teaspoon into the melted chocolate and place on top of one biscuits and working from the middle of the edge spread it to the surface so it is thinly coated.

Step 10: Then using a skewer, draw lines across the chocolate horizontally and then vertically to create a pattern.

Step 11: Continue this process for the rest of the biscuits and leave aside until the chocolate has set.
