Ingredients:
170g self-raising flour
55g icing sugar
170g butter (room temp)
55g custard powder
50g butter
100g icing sugar
Method:
Step 1: Preheat your oven to 180°c and line a baking tray with parchment paper.
Step 2: Next in a large mixing bowl, cream the butter and icing sugar until smooth and fluffy.
Step 3: Begin to add in the flour and custard powder, gradually so the mixture forms a paste.
Step 4: Divide into small balls, you can use a ice cream scoop or your hands for this. Place onto the tray making sure to leave space between each. Using a fork flatten each ball slightly.
Step 5: Bake for 12-15minutes until they appear dry and a nice golden brown underneath.
Step 6: Place onto a wire rack for cooling. While they are cooling, whisk together the butter (50g) and icing sugar (100g) to form the butter cream.
Step 7: Once the biscuits have cooled, pipe or spread some of the butter cream onto one half and sandwich together with the other.
