Ingredients: Cupcakes
150g All purpose flour
45g cocoa powder
1 tsp Baking soda
120g plain greek yogurt
2 to 3 very ripe bananas (peeled & mashed)
Pinch salt
2 large egg
3 tbsp olive oil
1 tsp vanilla extract
50g butter (melted)
100g granulated sugar
100g brown sugar
Extras:
200g milk chocolate:
100g chocolate chopped
100g melted
Method:
Step 1: Preheat the oven to 200˚C, and grease a loaf tin.
Step 2: In a large bowl whisk together the flour, cocoa, sugars, baking soda and salt.
Step 3: In another bowl, stir the mashed bananas, greek yogurt, eggs, melted butter, oil and vanilla extract. Mix all together making sure it is fully combined.
Step 4: Gently fold the wet ingredients into the dry ingredients until fully combined. Lastly, add the chopped chocolate in and again fold gently.
Step 5: Pour the mix into the loaf tin, and bake for 1hr - 1hr 10minutes. You can also use a toothpick or skewer stick to check if the middle has been cooked. It will come out clean if so.
Step 6: Allow to cool down in the tin on a cooling rack, before removing it to fully cool.
Step 7: While this is cooling, melt the chocolate by setting a heat proof bowl over simmering water, stirring until the chocolate is fully melted.
Step 8: Pour the chocolate onto the loaf and allow the chocolate to set before serving.
