Ingredients:
200g Semi dark chocolate
100ml Whipping cream (room temperature)
300ml Whipping cream (chilled)
Method:
Step 1: Chop the chocolate up into small pieces and place it into a large heat resistant bowl. Fill a small pot with water, just a little amount and once the water starts to simmer place the bowl full of chocolate on top of the simmering water.
Step 2: Add 100ml of cream into the bowl and mix together until the chocolate has melted. Take the bowl off the pot once the chocolate is melted. Allow it to cool for 5-10mins.
Step 3: Next whip your 300ml chilled cream until soft peaks form. Add the chilled chocolate into the whipped cream, a spoonful at a time.
Step 4: Keep whisking each time you add in the chocolate until firm peaks form.
Step 5: Allow chilling in the fridge for 2-3hrs before serving.
Tips: Serve with some honeycomb (see recipe) on top for an extra crunch or with some fresh fruit and whipped cream!
