Ingredients:
1 tbsp oil
1 tsp cumin seeds
2 green chillis
1 red onion
2 large tomatoes chopped
1 red onion
3cm ginger grated
3 garlic cloves grated
Bowl of cauliflower
Bowl of Potatoes
Spices:
1 tsp salt
1 tsp turmeric
1 tsp coriander
1 tsp chilli powder
1 tsp garam masala
Method:
Step 1: Firstly, heat a pan to medium/high and throw in your oil, cumin seeds, 2 green chillis in full and 1 red onion chopped and cook until onion turns golden.
Step 2: Next, add in your grated garlic and ginger, mixing it into your onions and cook for another 1 minute then add on your chopped tomatoes, cook again for a further 2-3mins.
Step 3: Spices go in next, add in all of the above stir around so all the spices have mixed in well. Add in your chopped potatoes and cauliflower with a little bit of water (1/3 cup) stir again so that all spices have coated the potatoes and cauliflower.
Step 4: Cover with a lid and cook for 15-18mins.
Serve with some basmati rice and fresh coriander.
