Cauliflower Sabji

Another vegetarian winner

Ingredients: Cauliflower
1 cauliflower, cut into florets
1/2 tsp turmeric powder
3 tbsp tomato puree
1/2 tsp salt
1/4 tsp black pepper
2 tbsp oil

Ingredients: “Sauce”
2 onions, chopped
2 tomatoes, chopped
2 tbsp sunflower oil
2 garlic cloves, grated
1 tsp black mustard seeds
1 inch ginger, grated

Spices
1 tsp chilli powder
1 tsp garam masala
1/4 tsp salt
1/4 tsp turmeric powder


Handful of coriander leaves, chopped


Method:
Step 1:
Firstly, we will marinate the cauliflower using the ingredients above. So add your cauliflower florets to a large bowl, pour in the tomato puree, oil, salt, pepper and turmeric and mix together with your hands to ensure that all your cauliflower has been full marinated. Allow to sit for 1-2 hrs or longer if you prefer.

Step 2: Once the cauliflower has been marinated and left to set, grease a baking tray with some oil and pour the cauliflower onto the tray, spreading evenly so that all the pieces have room to cook. Set oven to 180˚C for 30minutes.

Step 3: Firstly, heat a pan to medium/high and throw in your oil, cumin seeds, black mustard seeds allow to cook for one minute before adding in your chopped onions and tomatoes cook until onion turns golden and tomatoes are slightly soft.

Step 4: Next add in your minced ginger and garlic stir and allow to cook for another 1-2minutes.

Step 5: Add in all your spices above and mix well, then add in your baked cauliflower and stir for a further 2-3minutes.

Serve with fresh coriander and or some basmati rice. Enjoy!
