Ingredients:
115g butter
50g white sugar
150g packed brown sugar
190g flour
1 tsp baking powder
1 large egg
1 tsp vanilla extract
180g dark chocolate, chopped
100g peanut butter
Handful of marshmallows
Method:
Step 1: In a large bowl, sieve together the flour and baking powder and set aside.
Step 2: In another bowl, cream together the butter and sugars and then beat the egg and vanilla extract into the mixture until fluffy and smooth.
Step 3: Once that is done, add in your peanut butter and mix well until fully incorporated.
Step 4: Next, add in your dry ingredients (flour and baking powder) and mix together well. Then add in your chocolate chunks, stirring well.
Step 5: Place in the fridge for a few hours. Next, preheat the oven to 180˚C and line a baking sheet.
Step 6: Spoon the cookie dough onto the sheet, and shape each one into a tall ball. (Having it shaped into a tall ball allows it to stay chunky)
Step 7: Bake for 8-10 minutes, before the final minute, add your chopped marshmallows and allow to bake for the final minute. Remove from the oven, however, leave on the sheet for another 2-3mins, then transfer to a cooling rack.
