Triple Chocolate Cookies

Ingredients:
70g cocoa powder
136g granulated sugar
3 tbsp vegetable oil
1 egg
113g melted butter
180g plain flour
1/2 tsp baking powder
1/2 tsp salt
2 tsp vanilla extract
1/2 cup chocolate chips (or chopped chocolate of your choice)

Method:
Step 1: Firstly, preheat the oven to 175˚C and line 2 baking trays with some baking sheets.

Step 2: In a medium mixing bowl, mix together the cocoa powder, white sugar, butter (melted), and vegetable oil. And then beat in the egg and vanilla extract making sure it is fully incorporated.

Step 3: Next, in a separate bowl add your dry ingredients; flour, baking powder, and salt stirring well then add it to your wet ingredients mixing them both together forming a dough. Fold in your chocolate chips.

Step 4: Scoop out 1-2 tablespoons of dough, rolling them lightly into a ball. Place onto your baking tray and press down sightly or as thick or thin as you like.

Step 5:
Bake for 10-12 minutes, the cookies will come out soft but they will harden up as they are resting. Allow resting on the tray for 10minutes before transferring onto a wire rack to cool fully.

Tips:
Melt some chocolate and loosely add it on top of the cookies,
Biscuits stay fresh once stored in an airtight container.
