Avocado & Feta Open Sandwich

The perfect sandwich combo!

Ingredients:
Whole-wheat bread (sliced & toasted)
3/4 cup grape tomatoes (chopped)
1 avocado (mashed)
1 tsp olive oil
1/2 lemon (juiced)
feta cheese
handful of basil
Pinch of salt
Pinch of pepper
1/2 tsp olive oil

Method:
Step 1:
First toast the slices of bread under the girl for 3-4 minutes on both sides, flipping frequently so they don’t burn.

Step 2: Next, cut and mash the avocado in a bowl. You can season this with salt and pepper if you wish.

Step 3: Place the avocado onto the toast, next add the chopped tomatoes and then some feta cheese.

Step 4: Here season with lemon, salt & pepper if you haven’t done this already.

Step 5: Top with a handful of basil and a drip of olive oil.

Serve: Serve with a side salad, or your favourite cheese & onion crisps and enjoy!
