Ingredients:
Whole-wheat bread (toasted)
3/4 cup grape tomatoes (chopped)
4 slices of goats cheese
handful of basil
Pinch of salt
Pinch of pepper
1 tsp olive oil
1 tsp pine nuts (cooked)
Method:
Step 1: First combine the tomatoes, salt, and basil into a small bowl and mix.
Step 2: Toast the whole-meal bread, while this is toasting you can also toast the pine nuts by cooking them in a dry frying pan over medium-low heat, flipping frequently so they don’t burn. Set aside,
Step 3: Totally your choice but you can grill the goats cheese under the grill for 2-3 minutes before spreading it onto the toast. Or you can place this on the toast without grilling.
Step 4: So spread the goats cheese, then add the tomato mix and finish with pepper and the pine nuts.
Serve: Serve with a side salad, or your favourite cheese & onion crisps and enjoy!
