Ingredients: Cauliflower
1 large cauliflower
1 tbsp olive oil
1 tbsp paprika
1 tsp garlic powder
pinch of salt / pepper
For the sauce (dressing):
1 lemon zest
1 lemon juice
1 tsp honey
1 tsp olive oil
1 red chilli chopped
chopped parsely
Method:
Step 1: Let’s make the sauce first, whisk together all the ingredients above until slightly thick. Taste and if you need more lemon juice add in and set aside.
Step 2: Next, chop the cauliflower into florets and place into a large bowl and add in the spices (olive oil, garlic, paprika, salt and pepper) place onto a baking tray and cook for 25-30 minites at 200˚C.
Step 3: While the cauliflower is cooking prepare the dressing. Add in all the ingredients to a small pan on medium-low heat and allow to cook for 2 minutes,
Step 4: Pour the dressing over the cauliflower florets and add more fresh parsley to finish. Serve!
