Ingredients:
Whole-wheat bread (sliced & toasted)
3-4 cup tomatoes (chopped small)
1 small red onion (chopped small)
1 avocado (mashed)
1 tsp olive oil
1/2 lemon (juiced)
handful of basil
Pinch of salt
Pinch of pepper
1/2 tsp olive oil
Method:
Step 1: Firstly season the prawns with some salt, pepper and paprika. Cook in a hot pain for 3-4minutes on both sides or until prawns turn pink.
Step 2: Next toast the slices of bread under the grill for 3-4 minutes on both sides, flipping frequently
so they don’t burn.
Step 3: Next, cut and mash the avocado in a bowl add in the chopped tomatoes and red onion. You can season this with salt and pepper as well as some lemon juice.
Step 4: Place the avocado onto the toast, topping it with the prawns.
Step 5: Top with a handful of coriander and a drip of olive oil.
Serve: Serve with a side salad, or your favourite cheese & onion crisps and enjoy!
