Garlic Parmesan Roasted Veggies

Carrots & Potatoes the perfect combo

Ingredients:
(10-15) Medium Carrots, peeled & sliced into chip shapes
(10) baby potatoes, peeled and cut into half
2-3 garlic cloves (chopped finely) 
Fresh parsley (chopped)
2 tsp olive oil
2 tbsp grated parmesan
Pinch of salt and pepper
1 tbsp lemon juice

Method:
Step 1:
Firstly heat the oven at 220c and place a baking sheet on the tray.

Step 2: Par-boil the baby potatoes before tossing them on the tray with the carrots. Add the potatoes to a medium size bowl over high heat until half cooked.

Step 3: Toss the carrots, potatoes, garlic, olive oil, salt and pepper and some parmesan mixing all together on the baking tray.

Step 4: Bake until tender and caramelised usually takes about 25-30minutes.

Step 5: To finish toss with some lemon juice, fresh parsley, parmesan and a touch of pepper.

Step 6: Serve while hot and enjoy!
