Ginger Peanut Turkey

Add rice and top off with hoisin or sriracha

Ingredients:
250g Turkey Breast
Handful of coriander
1 garlic cloves (chopped)
2 Pok choi (chopped)
2 spring onions (seperate the white & green)
1 lime (juiced & zest)
1 piece of ginger (minced)
2 tsp brown sugar
1 1/2 salt
1 tsp olive oil
handful of peanuts (chopped)  

Extras:
Lime slices
Spring onion (green)
Sriracha sauce
Hoisin sauce


Method:
Step 1:
First chop the turkey into small pieces, and marinate with the ginger, brown sugar, salt, lime zest & juice, spring onion and olive oil. Leave to marinate for 20 minutes.

Step 2: Next cook the basmati rice, place water and rice in a pot on medium to high heat. Cook for 12 minutes leave aside with a lid on it until ready to serve.

Step 3: Pour 2 tsp of olive oil or coconut oil into a large pan or wok and bring to a medium heat. 

Step 4: Cook the turkey marinate, until the turkey is almost cooked through. Then add in garlic, pok choi, peanuts, coriander and any other vegetable you wish to eat.

Step 5: Allow to cook together until vegetables are soft and turkey is cooked through.

Step 6: Feel free to pour in a sauce if you wish, example would be some soy, or hoisin but of course this is not needed.

Step 7: Serve on top of basmati or jasmine rice.

Step 8:  Finish with some lemon juice, spring onion and more coriander.

I also love to top it off also with sriracha!
