Yellow Coconut
Prawn Curry

Add basmati rice & thai basil for perfection!

Ingredients:
200g Prawns
1 shallot (chopped)
2 red chilli’s
2 garlic cloves (chopped)
mix veg (own choice)
Pinch of salt & pepper 
2 tsp olive oil (or coconut oil)
3 tsp yellow curry paste
250ml coconut milk

Extras:
Basmati rice
Handful of Thai Basil


Method:
Step 1:
Place 2 tbsp of olive oil or coconut oil into a large pot over medium heat.

Step 2: Next add in the 3 tsp yellow curry paste, and cook for 2 minutes before adding the shallots, chilli and garlic.

Step 3: Cook for 2-3 minutes until shallots are soft. Pour in the coconut milk and bring to a boil.

Step 4: Add in the vegetables of your choice. I usually go for peppers, zucchini, broccoli and carrots.

Step 5: Reduce the heat and allow to simmer for 7-8 minutes.

Step 6: Add the prawns to the curry and allow to cook in the sauce, until pink and cooked through.

Step 7:  Serve with the basmati rice, thai basil on top.
