Baileys Cheesecake

For the Bailey lovers

Ingredients:
250g biscuits (biscoff or digestives)
100g melted butter (salted)
600g cream cheese
250ml double cream
40ml baileys original
100g icing sugar
1oog Milk chocolate (melted)
2-3 tsp cocoa powder (to sprinkle on top)

Method:
Add the biscuits to a food processor, and blend until crushed into a powder, put the crushed biscuits in a bowl and stir in the melted butter.

Pour the biscuit mix into the bottom of a large, greased springform tin. Press down firmly all over, then pop in the fridge to firm up while you make the filling.

Firstly, melt the chocolate and set aside to cool a bit. Place the double cream into a large bowl and whisk until stiff peaks form.

Add the cream cheese and sift the icing sugar and fold together gently then add in the baileys and again fold through.

And lastly, add the melted chocolate into the mix and fold through. Spoon the mixture onto the biscuit base and smooth over the surface.

Leave overnight in the fridge to get the best texture and result.

Before serving sift cocoa powder on top and then serve!
