Ingredients:
113g unsalted butter (room tempature)
1 egg
1 tsp vanilla extract
1/4 tsp salt
1/2 tsp baking soda
50g granulated sugar
100g brown sugar
190g all purpose flour
1/2 tsp bicarbonate soda
180g white chocolate (chunks)
1 pack M&M (pick out green & red colour)
100g milk chocolate (chopped)
Method:
Preheat the oven to 165˚C and line a 8” square baking tin with baking parchments, allowing it to overhang on both sides.
In a large bowl or stand mixer cream together the soft butter and both sugars (brown & white) on medium speed until light and fluffy.
Next, add in the egg and vanilla extract beating on a low speed until fully incorporated. Then add the flour, baking soda and salt and again beat until fully combined.
Leave aside a handful of M&Ms for the top and fold in the rest along with the chopped chocolate. Spread the cookie dough into the tin and press in the rest of the M&M’s on top.
Bake for 30-35 minutes until golden brown. The cookie dough may not be completely done in the middle but it will continue to cook as they are cooling.
Allow the cookies to cool completely in the pan, then pull them out using the overhang parchment.
