Ingredients:
50g Peanut butter
150g caster sugar
70g unsalted butter (soft)
180g plain flour
1 egg
1/8 tsp salt
1 tsp vanilla extract
1/4 tsp bicarbonate of soda
50g milk chocolate
10 peanut butter cups
Icing eyes (white fondant, black frosting)
Method:
Preheat the oven to 180˚C and line two large baking sheets with baking parchments.
Firstly, beat the butter, peanut butter and sugar together in a large bowl using a hand held whisk or kitchenaid until smooth, add in the egg and vanilla extract and whisk until fully smooth.
Next, stir in the flour, bicarb and 1/4 tsp salt and mix again for another few minutes until fully incorporated.
Scoop out the mixture using a tablespoon onto the baking trays, by creating balls and making sure to leave space between each one for spreading. Make a thumbprint mark into each biscuit.
Bake for 10-12 minutes, they will harden a little as they cool down on the cool racking. Place the peanut butter cups on top as they cool down, allow to cool completely.
Melt the chocolate in a microwave bowl in 20-30 second bursts. Scrape into a piping bag and leave to cool a little. Begin to pipe the “legs” onto each spider and then stick the two eyes onto the peanut butter cup. You can use the chocolate to stick the eyes on.
Leave to set and enjoy!
