Bruschetta

The perfect starter

Ingredients:
6-8 large tomatoes
Fresh Basil (chopped)
2 tsp Balsamic vinegar
1 tsp salt
1 tsp pepper
2 tsp olive oil
1 loaf bread 

Extras: For the garlic oil
5-6 garlic cloves
2 tsp olive oil 
1 tsp salt 


Method:
Step 1:
Firstly, lets heat the olive oil on medium low heat until hot in a small pan, then add in all the peeled garlic cloves.

Step 2: Make sure the garlic is submerged, add a little extra olive oil if you need to. Reduce the heat to low, and cook for about 30 minutes until garlic is soft and tender. Set aside.

Step 3: Next, chop up the tomatoes into small chunks. Add to a large bowl along with the fresh basil, salt, pepper, balsamic, olive oil and mix together until fully combined. If you want to go full garlic on this, you can also chop 1 -2 cloves and add to the tomato mix.

Step 4: Next, slice the loaf bread into nice chunky sizes. Cook under the grill on both sides until slightly toasted. Using a butter knife add the garlic oil to the bread and spread evenly. 

Step 5: Add the tomato mix on top and any extra basil or seasoning you wish. Continue this process until all the mix is on the bread slices and Enjoy!!
