Ingredients:
4 garlic cloves (finely chopped)
2 tsp pepper
50g asparagus (chopped)
1 tsp salt
2 tbsp olive oil
1 tsp butter
2 lemons (juice)
1 red chilli (finely chopped)
1 tbsp white wine
Handful of fresh parsley
Extras:
250g Salmon (chopped into squares)
200g Linguine or spaghetti
Method:
Step 1: Heat a large pot of water, once it begins to bowl add in a pinch of salt and 1 tsp olive oil.
Step 2: Next add in the linguine or spaghetti and allow to cook for 10 minutes
Step 3: Pour 2 tsp of olive oil into a large pan or wok and bring to a medium heat, once hot add in 1 tsp of butter also.
Step 4: Add the chopped garlic cloves and the chop the chilli into the pan of olive oil/butter. Allow to cook for 2 minutes.
Step 5: Chop the asparagus, the size is up to you. Toss into the pan alongside the chilli, garlic combo.
Step 6: Next slice the salmon into small square pieces, season with a pinch of salt and pepper. Add the salmon to the pan also.
Step 7: Cook the salmon for 4 minutes on both sides.
Step 8: Once the linguine is cooked, pour the water out using a sieve and place the linguine into the pan.
Step 9: Add a drop of white wine, lemon juice and parsley to the pan and cook all ingredients together until fully combined.
Step 10: Add more salt and pepper to taste.
Step 11: Serve with parmesan cheese, more fresh lemon and parsley if you wish.
