Ingredients: For the hummus
400g chickpeas
1 garlic clove
100ml olive oil
1 tsp ground cumin
1 tbsp tahini
1 lemon (juiced)
pinch of salt
2 ice cubes
Ingredients: For the tomatoes
200g cherry tomatoes
1 tsp olive oil
1 red chilli (optional)
3 garlic cloves (sliced finely)
pinch of salt & pepper
handful of basil
Method:
Step 1: Firstly, cook the chickpeas by adding to a pot of boiling water, and simmer for 20 minutes.
Step 2: Once cooled, and if you have the time and patience peal off the skin from the chickpeas.(This is not a necessary step, you can create hummus with the skin)
Step 3: Next, add all the ingredients (except the ice cubes) into a mixer.
Step 4: While blending, add the 2 ice cubes in. You can also add in some water if the hummus is too thick.
Step 5: Cook the tomatoes, garlic, chilli in a hot pan with the olive oil. Fry for 4-5 minutes until soft.
Step 6: Serve on top of the hummus, add a handful of basil on top, and serve with some
ciabatta bread.
