Ingredients: Salad
1 large romaine salad (chopped in half)
1 tsp olive oil
pinch of salt & pepper
1/2 cup panko breadcrumbs (toasted)
For the sauce (dressing):
1/2 lemon (juiced)
1 egg yolk
1 tsp mustard
2 tbsp olive oil
1 garlic clove (minced)
1 tbsp water
handful of parmesan
Method:
Step 1: Let’s make the sauce first, whisk together all the ingredients above until slightly thick. Taste and if you need more lemon juice add in and set aside.
Step 2: Next, fry the breadcrumbs in a medium heat pan until toasted. Set aside until ready to use.
Step 3: Prepare the romaine by rinsing under water to clean and dry using a towel. Next cut into half and drizzle with olive oil, salt and pepper.
Step 4: Place on the grill (bbq for best taste and results) and allow to cook on both sides for 2-3 minutes until you see grill marks.
Step 5: Remove and drizzle with the sauce or dressing you made earlier, sprinkle with the toasted breadcrumbs and a little more parmesan and serve!
