Greek Salad

Summer Memories

Ingredients:
1 large cucumber (sliced)
1 red onion (thinly sliced)
50g olives (without pips)
100g feta cheese (crumbled)
Handful of fresh dill (chopped)

For the dressing:
1/2 cup extra virgin olive oil
2 tsp red wine vinegar
1 tsp dried oregano
1 garlic clove crushed (not essential)
salt & pepper (to taste)

Method:
Step 1:
Prepare all of the ingredients that need to be chopped and sliced.

Step 2: Combine all dressing ingredients in a large bowl. Add in the tomatoes, cucumber, onion, olives and dill.

Step 3: Toss to combine and serve with some feta.
