Ingredients:
400g chickpeas
1 garlic clove
100ml olive oil
1 tsp ground cumin
1 tbsp tahini
1 lemon (juiced)
pinch of salt
2 ice cubes
Method:
Step 1: Firstly, cook the chickpeas by adding to a pot of boiling water, and simmer for 20 minutes.
Step 2: Once cooled, and if you have the time and patience peal off the skin from the chickpeas.(This is not a necessary step, you can create hummus with the skin)
Step 3: Next, add all the ingredients (except the ice cubes) into a mixer.
Step 3: While blending, add the 2 ice cubes in. You can also add in some water if the hummus is too thick.
Step 4: Serve with a touch of olive oil on top, and with some ciabatta bread.
Tips: This can stay fresh for 2-3 days in an airtight container in the fridge!
