Hot tomatoes

with lemon yogurt

Ingredients: For the hummus
200g tomatoes (small)
1 garlic clove
2 tsp olive oil
1 chilli (finely chopped)
1 tsp oregano
Pinch of salt & pepper
Handful of basil
1 loaf of sourdough bread (toasted & sliced)

Ingredients: For the lemon yogurt
4 tbs Greek yogurt
1 lemon (juice & zest)
Handful of coriander
Pinch of Salt & pepper


Method:
Step 1:
Firstly, prep the lemon yogurt by adding all the ingredients above mixing well together until fully combined.

Step 2: Cook the tomatoes, garlic, chilli in a hot pan with the olive oil. Fry for 4-5 minutes until the tomatoes are soft.

Step 3: Serve on top of the yogurt, add a handful of basil on top, a pinch of oregano and serve with some sourdough bread.
