Ingredients:
400g tin chopped tomatoes
2 tbsp tomato purée
3 cloves garlic
thumb size of peeled ginger
600ml, cooled vegetable stock
½-1 tbsp, depending on how hot you like it chipotle paste
Handful of chopped coriander
1, cut into bite-sized pieces green pepper
1 medium, chopped green chillli
Pinch of salt & pepper
Method:
Step 1: Prepare all of the ingredients and put the tomatoes, tomato purée, garlic and ginger in a food processor with the stock and blitz until smooth.
Step 2: Next, pour into a large pan and add the chipotle (if you wish) handful of the coriander, green pepper, most of the chilli, salt and pepper.
Step 3: Bring to a simmer and cook on a medium heat for 25 minutes.
Step 4: Add a little water or stock if the soup is too thick. Or like a true Irish mum, add some milk to thicken it if it is too thin.
Step 5: Serve in bowls with the rest of the coriander and extra chilli if you wish!
