Hummus Salad

Fresh & homemade

Ingredients:
250g hummus
100g chopped tomatoes
1 cucumber (chopped)
1 red onion (chopped)
100g Parsley (chopped)
Handful of pine-nuts
1 lemon (juiced)
1/2 tsp olive oil
Pinch of salt & pepper

Method:
Step 1:
Prepare all of the ingredients that need to be chopped and juiced.

Step 2: Next, cook the pine nuts in a frying pan, on a medium heat until they turn brown.

Step 3: Begin to layer the bowl, firstly pour and spread the hummus evenly.

Step 4: Next add the tomatoes and cucumber, and add a pinch of salt and pepper.

Step 5: Add in the red onion, parsley and pine nuts.

Step 6: To finish, pour over with some lemon juice, 1/2 tsp olive oil and season again with pepper and salt if you wish.

Step 7: This dish goes well with gluten free crackers and some homemade pesto!
