Tomato Burrata Salad

Fresh & homemade

Ingredients:
250g plum or cherry tomatoes
2 tbsp olive oil
2 tbsp red onion (finely chopped)
1 tbsp red wine vinegar
2 tsp basil (finely chopped)
2 tsp parsley (finely chopped)
pinch of salt / pepper

other:
150g burrata ball
ciabatta (toasted)


Method:
Step 1:
Firstly, in a large bowl whisk together the olive oil, red wine vinegar. Then add in the red onion, parsley, basil and a pinch of salt and pepper. Whisk until all is fully combined.

Step 2: Next add in the tomatoes and toss making sure that they are all fully marinaded.

Step 3: Next, toast the ciabatta (you can also drizzle with olive oil, and also rub some garlic on the toasted ciabatta for extra flavour)

Step 4: In a large serving bowl, place the burrata in the center. Add the marinated tomato around the outside. And place some basil on top.

Step 5: Serve by opening the burrata and with the ciabatta bread.
